Happy Cinco de Mayo!

So I understand that Cinco de May is more popular in the United States than it is in Mexico! That doesn't surprise me... seems us Americans can  make a holiday out of any occasion... so why not celebrate guacamole! La Carumba! Think it's kinda like St Patrick's Day where we find yet another excuse to celebrate! But I digress.....


Cinco de Mayo commemorates the day in 1862 when the Mexican army fought back and defeated the French army in a David-and-Goliath-like battle, which lasted two hours. There now you have some trivia to share while you may perhaps be heading to a local pub to munch on tacos and throw back salt-rimmed margaritas.

Me... I'd rather eat the food... Mexican that is!!  Here's a really cool website with some great recipes for variety of guacamole dips... from Seafood Guacamole made with shrimp, crab and lobster, to pineapple and cucumber guacamole (my favorite!)... and how about blue cheese guacamole (Camille I know you'll love that one!!).. bet it's great on hamburgers!

So no matter what your day brings... enjoy celebrating with our neighbors from the  South... or hey, wonder what would have happened if the French won that war... maybe instead Paris would have been built a little closer to San Diego.... that would be a trip!
